Chicken With Herb Sauce
INGREDIENTS:
4 boneless chicken breast halves
2 tbsp butter
2 tbsp olive oil
1 tbsp vegetable oil
1/2 cup chicken broth
2 tbsp chives, finely chopped
2 tbsp fresh parsley, finely chopped
2 tbsp lime or lemon juice
1 tsp fresh basil leaves, finely chopped
1 tsp Dijon mustard
salt and pepper to taste
PREPARATION:
- Wash chicken and pat dry.
- Flatten chicken breasts evenly with a mallet.
- Sprinkle salt and pepper over it.
- Heat 1 tbsp butter and 1 tbsp oil in a pan.
- Cook and stirring chicken over medium-high heat for 8-10 minutes on both side or until juices run clear.
- Remove from the platter and keep warm.
- Heat remaining 1 tbsp of butter and oil in another pan.
- Stir chicken broth, chives, fresh parsley, lemon juice, chopped basil leaves, Dijon mustard.
- Cook and stir until butter is melted.
- Pour this sauce over chicken.
- Chicken with herb Sauce is ready now.
- Serve hot with rice or pasta.
